INGREDIENTS:
1/2 large white onion, thinly sliced
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
3 cloves garlic, thinly sliced
Kosher salt
Freshly ground black pepper
3 tbsp. extra-virgin olive oil
1 tbsp. dried thyme
1 tbsp. Cajun seasoning
2 tsp. paprika
2 tsp. garlic powder
4 6-oz. salmon fillets
DIRECTIONS:
- Preheat oven to 400°. On a large baking sheet, add onions, peppers and garlic. Season with salt and pepper and toss with oil.
- Make seasoning blend: In a small bowl, whisk together thyme, cajun seasoning, paprika and garlic powder.
- Place salmon on a baking sheet, then top pieces with seasoning blend and rub all over salmon.
- Bake until vegetables are tender and salmon cooked through, 20 minutes.
