Parmesan-Crusted Salmon

Just try to resist this crispy, cheesy crust.

INGREDIENTS:

1 c. grated Parmesan, plus more for garnish

1/4 c. chopped parsley, plus more for garnish

1 tsp. dried oregano

4 salmon pieces, about 2 lbs.

extra-virgin olive oil

Kosher salt

Freshly ground black pepper

1 head broccoli, cut into florets 

DIRECTIONS:

  1. In a small bowl combine parmesan, parsley and oregano. Rub salmon with olive oil and season with salt and black pepper. Place handful of cheese mixture on top of each piece; press down lightly to adhere.
  2. Preheat oven to 425 degrees F. In a large cast iron skillet or nonstick pan over medium heat carefully place 2 pieces of salmon cheese-side down and sear until golden; about 2 to 3 minutes. Transfer to a plate cheese-side up. Wipe pan to remove excess cheese and repeat with remaining salmon. Place all salmon cheese-side up in the skillet and bake until cooked through, about 4 minutes.
  3. Meanwhile, bring a large pot filled with salted water to a boil and cook broccoli for 2 minutes.
  4. Plate salmon and drizzle with olive oil; garnish with parsley and parmesan. Serve immediately with broccoli.
